Orange Thai Beef Skewers

Everything tastes better on a stick!  Jack always gets so excited when he sees me pull the skewers out.  I love this recipe, because you can prepare it in the morning and when dinner time rolls around all you have to do is heat up the grill!  I'm finding more and more that I have to prepare dinner in the morning, before we even leave the house.  I'm just too pooped to think about dinner after spending all day trying to wear out my 3-ring circus.  If a morning goes by without dinner prep, I'm much more tempted to go for take out.  I serve this yummy dish with fresh cut oranges and brown rice... enjoy!

Orange Thai Beef Skewers
 Recipe (From Our Best Bites cookbook):

1 orange (zest & juice)
1/4 c soy sauce (I use Braggs)
1/4 c seasoned rice wine vinegar
1 tbls honey
1 tbls sesame oil
1 tsp ground ginger
1 tsp coriander
4 cloves minced garlic2-4 tsp Sriracha chili sauce (start with 2 tsp and add more to taste)
1 1/2 lb flank steak

Zest entire orange into a bowl, juice the orange and add to bowl.

Whisk soy sauce, vinegar, honey, sesame oil, ginger, coriander, and garlic into orange juice.  Add Sriracha sauce to taste.

Slice steak against the grain into 1/4 inch slices.  Place steak in a ziploc bag with orange marinade and refrigerate for 4-8 hours.

Thread Steak on skewers and grill over med/high heat for 3-4 minutes.  Serve immediately.
